Rhubarb Pudding Cake

Ingredients

  • 1 pound fresh rhubarb, cut up (3 cups)
  • 1 cup granulated sugar
  • 1 small box regular vanilla pudding mix
  • 2 cups milk
  • 1 (1-layer size) yellow cake mix
  • Sifted confectioners' sugar
  • Few drops red food coloring

Instructions

  1. Heat oven to 350 degrees F.
  2. Combine rhubarb, granulated sugar and red food coloring; let stand.
  3. Prepare pudding mix according to package directions, using the 2 cups milk.
  4. Pour into a 9-inch square baking dish.
  5. Top with rhubarb-sugar mixture.
  6. Prepare cake mix according to package directions; spoon evenly over rhubarb.
  7. Bake for 50 minutes or until cake is done.
  8. Sprinkle with confectioners' sugar.
  9. Serve warm.
