Rhubarb Surprise Cake

Ingredients

  • 1 (18.25 ounce) box yellow cake mix*
  • 4 1/2 cups diced rhubarb
  • 1 1/2 cups granulated sugar
  • 1 pint whipping cream (unwhipped)

Instructions

  1. Prepare cake mix according to directions on package.
  2. Pour into a 9 x 13-inch cake pan.
  3. Mix together rhubarb and sugar until the rhubarb is coated with the sugar.
  4. Spread evenly over the cake.
  5. Pour unwhipped whipping cream over cake and rhubarb mixture.
  6. Bake for 1 hour at 350 degrees F.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
