South St. Louis Deep Gooey Butter Cake

Ingredients

Bottom Layer

  • 1 (18.25 ounce) box yellow cake mix*
  • 1/2 cup butter, melted
  • 2 eggs

Topping

  • 8 ounces cream cheese
  • 1 box confectioners' sugar
  • 2 eggs, beaten

Instructions

  1. Heat oven to 350 degrees F.
  2. Mix ingredients for bottom layer and put into a greased and floured** 9 x 13-inch pan or two 8-inch pans.
  3. Mix and spread topping over bottom layer in pan.
  4. Bake for 40 to 45 minutes. Test for doneness with a wooden pick or butter knife.
  5. Sprinkle with additional confectioners' sugar.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
