Strawberry Cake

Ingredients

Cake

  • 1 (18.25 ounce) box white cake mix*
  • 4 eggs, unbeaten
  • 2/3 cup vegetable oil
  • 1/2 cup water
  • 1 small box strawberry gelatin
  • 1/2 small box frozen strawberries, thawed

Frosting

  • 1/2 cup (1 stick) butter
  • 1 (16 ounce) box confectioners' sugar
  • 1/2 box frozen strawberries, thawed

Instructions

Cake

  1. Mix all ingredients and pour into a 13 x 9-inch baking pan.
  2. Bake at 325 degrees F for 30 to 40 minutes.
  3. Poke holes in the cake and pour frosting over the top.

Frosting

  1. Mix well, and spread over cooled cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
