Strawberry Creamsicle Cake

Ingredients

  • 1 (18.25 ounce) box strawberry cake mix*
  • 2 (3 ounce) boxes strawberry Jell-O
  • 1 (3 ounce) box instant vanilla pudding
  • 1 cup milk
  • 2 cups water, divided
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) container strawberry Cool Whip, thawed

Instructions

  1. Bake cake according to package directions.
  2. Remove from oven. Poke holes in top of cake with a fork. Cool.
  3. Combine one package Jell-O with 1 cup hot water. Stir until dissolved.
  4. Add 1 cup cold water. Pour over cake.
  5. Chill for 2 hours.
  6. In a mixing bowl, beat cream cheese until smooth.
  7. Add second box of Jell-O pudding, milk and vanilla extract. Beat well.
  8. Fold in Cool Whip.
  9. Spread on cooled cake.
  10. Keep refrigerated.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
