Strawberry Punch Cake

Ingredients

  • 1 (18.25 ounce) box white cake mix*
  • 1 large box strawberry gelatin
  • 1 can strawberry soda
  • 2 or 3 bananas
  • 1 small box instant vanilla pudding
  • 1 large container Cool Whip

Instructions

  1. Prepare cake according to directions on box, and bake in a 13 x 9-inch pan. Let cake cool.
  2. While cake is baking, dissolve strawberry gelatin in 2 cups boiling water and 2 cups cold water. Let set until cool.
  3. Punch holes in cake about 1-inch apart to bottom of pan.
  4. Add strawberry soda to cooled gelatin mixture. Pour over cake gradually.
  5. Slice 2 or 3 bananas and put on top of cake.
  6. Topping: Fold instant pudding into Cool Whip. Spread over top of cake and refrigerate overnight or all day.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
