Strawberry Refrigerator Cake

Ingredients

  • 1 (18.25 ounce) box strawberry-flavored cake mix*
  • 2 (10 ounce) packages frozen sliced strawberries
  • 1 small box vanilla instant pudding mix
  • 1 cup milk
  • 2 cups frozen whipped topping, thawed
  • Fresh strawberries, for garnish (optional)

Instructions

  1. Prepare cake mix as directed on package. Allow to cool.
  2. Poke holes on top of cake.
  3. Puree thawed strawberries with juice in a blender or food processor, then spoon over top of baked cake.
  4. To make topping, prepare pudding mix as directed on package using only one cup of milk.
  5. Fold whipped topping into pudding mixture and spread over cake.
  6. Refrigerate for at least 4 hours.
  7. Arrange fresh strawberries decoratively on top of cake, then serve.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
