The Christian Brothers Sherry Cake

Ingredients

  • 1 (18.25 ounce) box yellow cake mix*
  • 4 eggs
  • 1 small box vanilla instant pudding
  • 3/4 cup The Christian Brothers Cream Sherry
  • 3/4 cup vegetable oil
  • 1 teaspoon nutmeg

Instructions

  1. Heat oven to 350 degrees F. Grease and lightly flour** a fluted tube pan.
  2. Place all ingredients in large bowl. Beat together with electric mixer for 5 minutes.
  3. Pour into cake pan and bake for 50 minutes.
  4. Cool for 30 minutes.
  5. Dust with confectioners' sugar or glaze with a mixture of confectioners' sugar and sherry.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
