Toasted Coconut Marshmallow Cake

Ingredients

  • 1 box Jet-Puff toasted-coconut marshmallows, cut in half
  • 1 (18.25 ounce) box favorite chocolate cake mix*

Instructions

  1. Spray a 9 x 13-inch glass baking dish.
  2. Spread marshmallows, cut side down, on the bottom of prepared baking dish.
  3. Prepare cake batter as directed on the box.
  4. Pour batter over the marshmallows and bake per directions on the cake mix box. The marshmallows will rise to the top, forming a frosting.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.

* Can substitute any flavor cake you desire - pineapple would be good.
