Tomato Soup Spice Cake

Ingredients

Cake

  • 1 (18.25 ounce) box spice cake mix*
  • 1 can condensed tomato soup
  • 1/2 cup water
  • 2 eggs

Easy Cream Cheese Frosting

  • 6 ounces cream cheese, softened
  • 1 pound sifted confectioners' sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees F. Grease and lightly flour** two 8- or 9-inch round cake pans.

Cake

  1. Mix cake mix, soup, water and egg according to package directions.
  2. Pour into prepared pans.
  3. Bake for 25 minutes or until wooden pick inserted in center comes out clean.
  4. Cool on racks for 10 minutes.
  5. Remove from pans and cool completely on racks.
  6. Fill and frost with Easy Cream Cheese Frosting.

Easy Cream Cheese Frosting

  1. Beat cream cheese until smooth.
  2. Gradually blend in sugar and vanilla extract. Thin with milk if desired.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
