Ultimate Easy Pineapple Cake
Ingredients
- 1 (18.25 ounce) box yellow cake mix*
- 1 (20 ounce) can crushed pineapple (do not drain)
- 1/2 cup (1 stick) butter
- 1 1/2 cups granulated sugar
Instructions
- Prepare yellow cake mix as directed on box, reserving 1 cup of batter for cake topping.
- Bake in a 13 x 9 inch pan.
- While cake is baking, prepare topping.
- Topping: Mix undrained pineapple, butter, granulated sugar and 1 cup reserved cake batter in a large saucepan. Cook and stir over low heat until it begins to thicken.
- Pour over hot cake.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
