Vanilla Nut Coffee Cake

Ingredients

Cake

  • 1 (18.25 ounce) box yellow cake mix*
  • 1 small box instant vanilla pudding mix
  • 3/4 cup vegetable oil
  • 3/4 cup water
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon butter extract
  • 1/4 cup butter (NO butter)
  • 1/3 cup ground nuts
  • 1/2 cup granulated sugar
  • 4 teaspoons cinnamon
  • 1/2 cup ground nuts

Glaze

  • 1 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons milk
  • Scant 1/2 teaspoon butter extract

Instructions

Cake

  1. Mix together cake mix, pudding mix, vegetable oil and water.
  2. Add eggs one at a time, beating well after each egg addition, then beat 6 minutes at high speed.
  3. Add vanilla and butter extracts, then mix.
  4. Grease Bundt pan with butter and sprinkle the 1/3 cup ground nuts over butter covering sides and bottom.
  5. Mix together sugar, cinnamon and the 1/2 cup ground nuts and sprinkle between layers of batter beginning and ending with batter.
  6. Bake for 40 to 60 minutes, cool for 6 minutes, then glaze.

Glaze

  1. Mix ingredients together.
  2. After cake has cooled for 6 minutes, glaze.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
