Watergate Cake (high altitude)

Ingredients

Cake

  • 1 (18.25 ounce) box white cake mix*
  • 1 small box pistachio pudding mix
  • 4 large eggs
  • 3/4 cup + 3 tablespoons cooking oil
  • 1 cup 7-Up (room temperature)
  • 1/2 cup nuts
  • 1/2 cup coconut
  • 1 teaspoon coconut flavoring
  • 3 tablespoons flour

Frosting

  • 2 small boxes pistachio pudding mix
  • 4 packages Dream Whip
  • 3 cups milk

Instructions

Cake

  1. Mix cake mix and pudding together.
  2. Add eggs and oil. Mix well.
  3. Slowly add 7-Up.
  4. Now add nuts, coconut and flavoring.
  5. Bake at 350 degrees F for 25 to 30 minutes or until done in center.

Frosting

  1. Mix all ingredients together until stiff and frost a well-cooled cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
