Ingredients

Cake

  • 1 (18.25 ounce) box yellow cake mix*
  • 1 cup water
  • 1 (14 ounce) can sweetened condensed milk, divided
  • 1 cup vegetable oil
  • 3 eggs
  • 1 (14 ounce) package caramels
  • 1 cup chopped pecans

Frosting

  • 1/2 cup melted butter
  • 1 pound confectioners' sugar
  • 6 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

Cake

  1. Heat oven to 350 degrees F. Grease a 9 x 13-inch baking pan.
  2. Combine cake mix, water, 1/2 of sweetened condensed milk, oil and eggs. Beat well.
  3. Spread 1/2 the batter into prepared pan.
  4. Bake for about 18 to 20 minutes.
  5. Melt caramels with remaining sweetened condensed milk in microwave, stirring every 30 seconds.
  6. Stir in pecans.
  7. Pour over hot cake.
  8. Spread remaining batter over caramel layer.
  9. Bake for 30 minutes or until tests done.
  10. Spread frosting over warm cake.

Frosting

  1. Combine butter, confectioners' sugar and milk; beat well.
  2. Add vanilla extract; mix well.
  3. Pour over cake. It will melt and run to the sides, so try twisting the pan to get it evenly distributed.
  4. Refrigerate for a while before cutting.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
