Candy and Peanut Chews

Yellow cake mix makes it quick and easy to bake a batch of delicious homemade candy and peanut chewy bars for anytime dessert.

Ingredients

Base

  • 1 (18.25 ounce) box yellow cake mix*
  • 1/2 cup butter, softened
  • 1 egg
  • 3 cups miniature marshmallows

Topping

  • 1/2 cup light corn syrup
  • 1/4 cup sugar
  • 1/4 cup firmly packed brown sugar
  • 1/2 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 2 cups crisp rice cereal
  • 2 cups salted peanuts
  • 1 cup candy corn

Instructions

  1. Heat oven to 350 degrees F.
  2. In large bowl, combine cake mix and butter; mix well. Stir in egg; blend well. Press mixture in bottom of ungreased 15 x 10 x 1 inch baking pan.
  3. Bake at 350 degrees F for 10 to 14 minutes or until set and light golden brown around edges.
  4. Remove pan from oven; immediately sprinkle with marshmallows.
  5. Return to oven; bake an additional 1 to 2 minutes or until marshmallows just begin to puff. Cool while preparing topping.
  6. Remove from heat; stir in peanut butter and vanilla extract until well blended. Stir in cereal, peanuts and candy corn. Immediately spoon warm topping over marshmallows; spread to cover.
  7. Refrigerate for 30 minutes or until firm.
  8. Cut into bars.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
