Chewy Lemon Bars
Ingredients
- 1 (18.25 ounce) box lemon cake mix*
- 1 egg
- 1/2 cup butter, melted
- 3 3/4 cups confectioners' sugar
- 2 eggs, beaten
- 8 ounces cream cheese, softened
- 1 teaspoon vanilla extract
Instructions
- Heat oven to 350 degrees F.
- Mix together cake mix, egg and butter. Spread into a 9 x 13 inch pan.
- In a separate bowl, mix together confectioners' sugar, beaten eggs, softened
cream cheese and vanilla extract. Mix until smooth. Spread mixture over the bottom
layer.
- Bake for 30 to 40 minutes or until top layer turns golden brown.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
