Chocolate Cream Cheese Bars

Ingredients

Crust

  • 1 (18.25 ounce) box devil's food cake mix*
  • 1/2 cup (1 stick) butter
  • 2 eggs

Filling

  • 8 ounces cream cheese, softened
  • 3 eggs
  • 1 box confectioners' sugar

Instructions

Crust

  1. Heat oven to 325 degrees F.
  2. Mix the cake mix, butter and eggs by hand until smooth. (Mixture will be thick.)
  3. Spray a 13 x 9 inch baking pan with cooking spray and spread mixture into pan.

Filling

  1. With an electric mixer, blend the cream cheese, eggs and sugar together until smooth, making sure there are no lumps. Pour mixture on top of cake mixture.
  2. Bake for 1 hour.
  3. Cool before serving.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
