Crumby Lemon Bars
Yield: about 24
Ingredients
- 1 (18.25 ounce) box lemon or yellow cake mix*
- 1/2 cup (1 stick) butter, softened
- 1 egg + 3 egg yolks
- 2 cups finely crushed saltine crackers (1/4 pound)
- 1 (14 ounce) can sweetened condensed milk
- 1/2 cup lemon juice from concentrate
Instructions
- In large bowl, beat cake mix, butter and 1 egg with mixer until crumbly.
- Stir in saltine crumbs. Reserving 2 cups crumb mixture, press remaining crumbs on bottom of greased 13 x 9 inch baking pan.
- Bake for 20 minutes.
- With mixer or wire whisk, beat 3 egg yolks, sweetened condensed milk and lemon juice. Spread over prepared crust.
- Top with reserved crumb mixture.
- Bake for 25 minutes or until set.
- Cool. Cut into bars.
- Store covered in refrigerator.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
