Crumby Lemon Bars

Ingredients

  • 1 (18.25 ounce) box lemon or yellow cake mix*
  • 1/2 cup (1 stick) butter, softened
  • 1 egg + 3 egg yolks
  • 2 cups finely crushed saltine crackers (1/4 pound)
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup lemon juice from concentrate

Instructions

  1. In large bowl, beat cake mix, butter and 1 egg with mixer until crumbly.
  2. Stir in saltine crumbs. Reserving 2 cups crumb mixture, press remaining crumbs on bottom of greased 13 x 9 inch baking pan.
  3. Bake for 20 minutes.
  4. With mixer or wire whisk, beat 3 egg yolks, sweetened condensed milk and lemon juice. Spread over prepared crust.
  5. Top with reserved crumb mixture.
  6. Bake for 25 minutes or until set.
  7. Cool. Cut into bars.
  8. Store covered in refrigerator.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
