Gooey Coconut Bars


  • 1 (18.25 ounce) box French vanilla cake mix
  • 2 eggs
  • 1/2 cup (1 stick) butter or margarine, melted
  • 8 ounces cream cheese, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 (16 ounce) box confectioners' sugar
  • 1 1/2 cups shredded coconut


  1. Heat oven to 350 degrees F. Spray a 13 x 9-inch baking pan with Pam.
  2. Combine first 3 ingredients. Press into bottom about 1 inch up the sides of prepared baking pan.
  3. Mix together next 6 ingredients and pour over crust.
  4. Bake for 45 minutes, or until golden brown on top.
  5. Let cool completely to set, and cut into small squares.
