Kentucky Butter Cake Cookies

Ingredients

Cookies

  • 1 (18.25 ounce) box white cake mix*
  • 2 eggs, whisked
  • 1/3 cup butter, melted

Glaze

  • 1/4 cup butter
  • 1/2 cup granulated sugar
  • 1 tablespoon water
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees F. Line a cookie sheet with parchment paper.

Cookies

  1. Combine cookie ingredients in large bowl and mix well. Dough will be thick. Using a medium size cookie scoop or heaping tablespoon, drop cookies onto prepared cookie sheet.
  2. Bake for 7 to 8 minutes.
  3. Remove from oven and let cool on cookie sheet for 4 to 5 minutes before moving them to a cooling rack. Repeat until all of the dough has been used.

Glaze

  1. Combine the glaze ingredients in a small saucepan. Cook over medium-low heat, whisking constantly until the sugar is dissolved. Spoon a teaspoon of glaze over each cookie and spread out, if necessary. Let glaze set, then sprinkle with confectioners' sugar.
  2. Store cookies in an airtight container at room temperature for up to 3 days.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
