Lemon Bites

Yield: approximately 72 cookies

Ingredients

  • 1 (18.25 ounce) box lemon cake mix*
  • 1 egg
  • 4 ounces thawed Cool Whip
  • 1/2 cup confectioners' sugar

Instructions

  1. Heat oven to 350 degrees F.
  2. In a large bowl, combine cake mix, egg and cool whip, mixing to combine. Batter will be very stiff.
  3. Drop by teaspoonful into confectioners' sugar. Roll into 1-inch balls, using sugar to keep dough from sticking to hands. Place balls 2 inches apart onto greased baking sheets.
  4. Bake for 10 to 12 minutes or until light brown on bottom.
  5. Transfer to a wire rack to cool completely.
  6. Store in an airtight container.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
