Lemon Butter Chews
Ingredients
- 1 (18.25 ounce) box lemon cake mix*
- 1 egg
- 8 tablespoons (1 stick) butter, softened
- 8 ounces cream cheese (room temperature)
- 2 eggs
- 2 cups confectioners' sugar
Instructions
- Combine cake mix, 1 egg and butter. Spoon into ungreased 9 x 13 inch baking pan. Press evenly into bottom of pan.
- Combine cream cheese, 2 eggs and confectioners' sugar and beat at least 3 minutes or until smooth. Spread over cake batter.
- Bake at 350 degrees F for 45 minutes.
- Cool and slice into squares before serving.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
