Lemon Crisp Cookies

Lemon cake mix is the base for these quick, tasty cookies with Rice Krispies providing the crunch.

Ingredients

  • 1 (18.25 ounce) box lemon cake mix
  • 1 cup crisp Rice Krispies cereal
  • 1 teaspoon grated lemon peel
  • 1/2 cup butter, melted
  • 1 egg, beaten

Instructions

  1. Heat oven to 350 degrees F.
  2. In a large bowl combine the cake mix, Rice Krispies and grated lemon peel.
  3. Add the butter and egg and mix well. The dough will be crumbly.
  4. Shape dough into 1-inch balls and place 2 inches apart on ungreased cookie sheets.
  5. Bake for 10-12 minutes or until set.
  6. Allow cookies to cool on cookie sheets for 5 minutes.
  7. Use a spatula to remove cookies from cookie sheets, and place on wire racks to cool completely.

Yield: 3 1/2 dozen cookies
