Old Fashioned Oatmeal Cookies

Yield: 4 dozen cookies

Ingredients

• 1 (18.25 ounce) box Duncan Hines Spice Deluxe cake mix*
• 2 cups uncooked rolled oats
• 2 eggs
• 3/4 cup vegetable oil
• 1/4 cup milk
• 2 cups raisins
• 1 cup chopped nuts
• 1/4 cup firmly packed dark brown sugar

Instructions

1. Heat oven to 350 degrees F.
2. Combine all ingredients and mix well. Drop from a teaspoons onto an ungreased cookie sheet.
3. Bake for 10 to 12 minutes, until cookies test done with a wooden pick.
4. Cool on cookie sheet for about 1 minute, then remove to rack to finish cooling.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
