Peanut Butter Fudge Bars

Yield: 2 1/2 dozen

Ingredients

  • 1 (18.25 ounce) box yellow cake mix*
  • 1 cup creamy peanut butter
  • 1 egg
  • 1/2 cup vegetable oil
  • 1 (14 ounce) can sweetened condensed milk
  • 1 cup (6 ounce) semisweet chocolate chips
  • 2 tablespoons butter

Instructions

  1. Heat oven to 350 degrees F. Grease a 13 x 9 inch baking pan.
  2. In a bowl, combine cake mix, peanut butter, egg and oil. Press two-thirds of the mixture into prepared baking pan.
  3. Bake for 10 minutes.
  4. Cool on a wire rack for 5 minutes.
  5. In a heavy saucepan, heat the milk, chocolate chips and butter over low heat; stir until blended. Pour over crust.
  6. Sprinkle with remaining crumb mixture.
  7. Bake for 20 to 25 minutes or until golden brown.
  8. Cool on wire rack.
  9. Cut into bars.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
