Pecan Pie Bars

Ingredients

  • 1 (18.25 ounce) box yellow cake mix*
  • 1/2 cup butter
  • 4 eggs
  • 1/2 cup firmly packed brown sugar
  • 1 1/2 cups dark corn syrup
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Instructions

  1. Heat oven to 350 degrees F.
  2. Reserve 2/3 cup dry cake mix.
  3. To remaining dry cake mix, add the butter and one of the eggs. Mix until crumbly. Press into a 13 x 9 inch baking pan.
  4. Bake until brown.
  5. Mix well the reserved cake mix, brown sugar, remaining eggs, corn syrup, vanilla extract and pecans.
  6. Pour over browned crust and return to oven and bake for 30 to 35 minutes longer.
  7. Cool; slice into bars.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
