Quick Chocolate Softies

Yield: 4 dozen cookies

Ingredients

• 1 (18.25 ounce) box devil's food cake mix*
• 1/3 cup water
• 1/4 cup butter, softened
• 1 egg
• 1 cup white chocolate baking chips
• 1/2 cup coarsely chopped walnuts

Instructions

1. Heat oven to 350 degrees F. Grease cookie sheets or line with parchment paper.
2. On low speed combine cake mix, water, butter and egg just until moistened. Beat for 1 minute on medium speed. Dough will be thick.
3. Stir in chips and nuts.
4. Drop heaping teaspoonsful onto greased cookie sheets.
5. Bake for 10 to 12 minutes.
6. Cool for 1 minute then remove to rack to cool completely.

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
