Raspberry Cream Bars

Ingredients

  • 1 (18.25 ounce) box yellow cake mix*
  • 1/2 cup butter
  • 1 cup raspberry preserves
  • 8 ounces cream cheese
  • 1/4 cup granulated sugar
  • 2 tablespoons flour
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/4 cup raspberry preserves

Instructions

  1. Heat oven to 350 degrees F.
  2. Crust: combine cake mix and butter in a bowl until crumbly. Reserve 1 cup.
  3. Press remaining mixture into 13 x 9 inch pan.
  4. Spread 1 cup preserves over crust.
  5. Filling: Stir together cream cheese, flour, sugar, vanilla extract and egg until well blended; fold in preserves.
  6. Carefully spread filling over crust.
  7. Sprinkle reserved cake mix/butter mixture over filling.
  8. Bake for 30 to 40 minutes or until golden brown.
  9. Cool before cutting into bars.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
