Rum Bars

Ingredients

  • 1 (18.25 ounce) box yellow butter cake mix*
  • 1 egg
  • 1/2 cup (1 stick) butter, melted
  • 1 (16 ounce) box confectioners' sugar
  • 2 eggs
  • 8 ounces cream cheese
  • 1 teaspoon rum extract

Instructions

  1. Mix together cake mix, 1 egg and butter. Pat out onto a 15 1/2 x 11 inch cake pan.
  2. Mix confectioners' sugar, 2 eggs, cream cheese and rum extract. Spread this mixture on top of cake mixture.
  3. Bake for 30 to 35 minutes at 350 degrees F.
  4. Cut into bars.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
