Simple Lemon Bars

Ingredients

  • 1 (18.25 ounce) box yellow cake mix*
  • 2 cups crushed corn flakes
  • 1/2 cup firmly packed brown sugar
  • 1/3 cup chopped nuts
  • 1/2 cup softened butter
  • 1 small box lemon pudding (NOT INSTANT)
  • 1 can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup confectioners' sugar
  • 1/4 teaspoon vanilla extract
  • 3 to 5 teaspoons water

Instructions

  1. In a large bowl, combine the first 5 ingredients until crumbly.
  2. Reserve 1 cup for topping, press remainder in the bottom of a greased 15 x 10 inch pan.
  3. Combine pudding, sweetened condensed milk and vanilla extract; mix well.
  4. Spread over crust, then sprinkle with reserved crumbs.
  5. Bake at 350 degrees F for 20 to 30 minutes.
  6. Combine confectioners' sugar, vanilla extract and water. Drizzle over warm bars.
  7. Cool completely and store in refrigerator.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
