Snickerdoodles

Ingredients

• 3 tablespoons granulated sugar
• 1 teaspoon cinnamon
• 1 (18.25 ounce) box yellow cake mix without pudding*
• 2 eggs
• 1/4 cup oil

Instructions

1. Heat oven to 375 degrees F. Grease or spray cookie sheets.
2. Mix cinnamon and sugar in small bowl and set aside.
3. Combine remaining ingredients in large bowl until well mixed. Roll dough into 1 inch balls; roll in cinnamon sugar mixture.
4. Place balls 2 inches apart on cookie sheet and flatten with bottom of glass.
5. Bake at 375 degrees F for 8 minutes or until set.
6. Cool on cookie sheet for 1 minute then cool on a piece of foil on a flat surface.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
