Tropical Banana Cookies

Yield: 4 dozen cookies

Ingredients

• 1 (18.25 ounce) box Duncan Hines Banana Supreme Deluxe cake mix*
• 1/4 cup vegetable oil
• 1 egg
• 3/4 cup mashed ripe banana (2 medium bananas)
• Pecan halves, if desired

Instructions

1. Heat oven to 350 degrees F.
2. Combine all ingredients and mix well.
3. Drop from a teaspoon onto an ungreased cookie sheet. If desired, top each cookie with a pecan half.
4. Bake for 10 to 12 minutes, until golden brown.
5. Cool on cookie sheet for about 1 minute, then remove to rack to finish cooling.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
