Vacuum Cleaner Bars
Ingredients
- 1/2 cup butter, melted
- 1 (18.25 ounce) box yellow cake mix* (without pudding)
- 3 eggs, divided
- 8 ounces cream cheese, softened
- 1 pound confectioners' sugar
- 1/2 cup flaked coconut
- 1/2 cup chopped walnuts or pecan
Instructions
- Combine butter, cake mix and one egg. Stir together until dry ingredients are moistened.
- Pat mixture into bottom of well-greased 15 x 10 inch jellyroll pan.
- Bake for 10 minutes at 325 degrees F.
- Beat remaining two eggs lightly, then beat in cream cheese and confectioners' sugar.
- Stir in coconut and nuts.
- Pour over mixture in jellyroll pan.
- Bake at 325 degrees F for 45 to 50 minutes or until golden brown.
- Cool to room temperature before cutting into squares.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
