Lemon Squares
Ingredients
- 1 (18.25 ounce) white cake mix*
- 1 egg
- 6 tablespoons vegetable oil
- 1 heaping tablespoon lemon juice
- 8 ounces cream cheese, softened
- 1 egg
- 1/3 cup granulated sugar
Instructions
- Mix cake mix, 1 egg and vegetable oil until crumbly.
- Put 1/2 of mixture into 9 x 13 inch pan.
- Bake for 15 minutes at 325 degrees F.
- Combine remaining ingredients and pour on top of crumb mixture.
- Put remaining crumb mixture on top.
- Bake at 325 degrees F for 15 minutes.
- Cool completely on wire rack.
- Cut into squares.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
