Lemon Squares

Ingredients

  • 1 (18.25 ounce) white cake mix*
  • 1 egg
  • 6 tablespoons vegetable oil
  • 1 heaping tablespoon lemon juice
  • 8 ounces cream cheese, softened
  • 1 egg
  • 1/3 cup granulated sugar

Instructions

  1. Mix cake mix, 1 egg and vegetable oil until crumbly.
  2. Put 1/2 of mixture into 9 x 13 inch pan.
  3. Bake for 15 minutes at 325 degrees F.
  4. Combine remaining ingredients and pour on top of crumb mixture.
  5. Put remaining crumb mixture on top.
  6. Bake at 325 degrees F for 15 minutes.
  7. Cool completely on wire rack.
  8. Cut into squares.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
