Pecan Pie

Ingredients

Crust

  • 1 (18.25 ounce) box yellow cake mix*, divided
  • 1/2 cup (1 stick) butter
  • 1 egg

Filling

  • 3 eggs
  • 1/2 cup brown sugar
  • 1 1/2 cups light corn syrup
  • 2/3 cup yellow cake mix
  • 1 teaspoon vanilla extract
  • 1 cup nuts

Instructions

Crust

  1. Heat oven to 350 degrees F.
  2. Set aside 2/3 cup of the cake mix for use in the filling.
  3. Melt butter, then stir in cake mix and egg.
  4. Bake for 15 minutes.

Filling

  1. Mix all ingredients except nuts for 3 minutes at medium speed of electric mixer.
  2. Add nuts and pour into baked pie crust.
  3. Bake for 30 to 35 minutes.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
