Coconut Revel Cupcakes

Ingredients

Cream Cheese Mixture

  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1 egg
  • 3/4 cup coconut
  • 1/2 cup semisweet chocolate chips

Cake

  • 1 (18.25 ounce) box devil's food cake mix*
  • 1 1/4 cups water
  • 1/3 cup vegetable oil
  • 3 eggs

Glaze

  • 1/2 cup semisweet chocolate chips
  • 3 tablespoons butter

Instructions

  1. Heat oven to 350 degrees F. Line 36 muffin cups with paper baking cups.

Cream Cheese Mixture

  1. In small bowl, beat together sugar, vanilla extract, cream cheese and egg.
  2. Stir in coconut and chocolate chips. Set aside.

Cake

  1. In large bowl blend cake mix, water, oil and eggs. Beat at highest speed for 2 minutes.
  2. Fill cupcake pans half full with cake mix.
  3. Top each with a heaping teaspoon of cream cheese mixture.
  4. Bake for 20 to 30 minutes.
  5. Remove from pans, cool completely.

Glaze

  1. Melt chocolate chips and butter over low heat. When smooth, drizzle scant teaspoons of glaze over cupcakes.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
