Coconut Revel Cupcakes
Ingredients
Cream Cheese Mixture
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1 egg
- 3/4 cup coconut
- 1/2 cup semisweet chocolate chips
Cake
- 1 (18.25 ounce) box devil's food cake mix*
- 1 1/4 cups water
- 1/3 cup vegetable oil
- 3 eggs
Glaze
- 1/2 cup semisweet chocolate chips
- 3 tablespoons butter
Instructions
- Heat oven to 350 degrees F. Line 36 muffin cups with paper baking cups.
Cream Cheese Mixture
- In small bowl, beat together sugar, vanilla extract, cream cheese and egg.
- Stir in coconut and chocolate chips. Set aside.
Cake
- In large bowl blend cake mix, water, oil and eggs. Beat at highest speed for 2 minutes.
- Fill cupcake pans half full with cake mix.
- Top each with a heaping teaspoon of cream cheese mixture.
- Bake for 20 to 30 minutes.
- Remove from pans, cool completely.
Glaze
- Melt chocolate chips and butter over low heat. When smooth, drizzle scant teaspoons of glaze over cupcakes.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
