Coconut Revel Cupcakes

Ingredients

Cream Cheese Mixture

  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1 egg
  • 3/4 cup coconut
  • 1/2 cup semisweet chocolate chips

Cake

  • 1 (18.25 ounce) box devil's food cake mix
  • 1 1/4 cups water
  • 1/3 cup vegetable oil
  • 3 eggs

Glaze

  • 1/2 cup semisweet chocolate chips
  • 3 tablespoons butter

Instructions

  1. Heat oven to 350 degrees F. Line 36 muffin cups with paper baking cups.
  2. Cream Cheese Mixture: In small bowl, beat together sugar, vanilla extract, cream cheese and egg.
  3. Stir in coconut and chocolate chips. Set aside.
  4. Cake: In large bowl blend cake mix, water, oil and eggs. Beat at highest speed for 2 minutes.
  5. Fill cupcake pans half full with cake mix.
  6. Top each with a heaping teaspoon of cream cheese mixture.
  7. Bake for 20-30 minutes.
  8. Remove from pans, cool completely.
  9. Glaze: Melt chocolate chips and butter over low heat. When smooth, drizzle scant teaspoons of glaze over cupcakes.
