Orange Jell-O Cake

Ingredients

Cake

  • 1 (18.25 ounce) box yellow cake mix*
  • 1 small box orange gelatin
  • 2/3 cup vegetable oil
  • 2/3 cup water
  • 4 eggs
  • 2/3 cup orange juice
  • 1 cup granulated sugar

Glaze

  • 2/3 cup orange juice
  • 1 cup confectioners'' sugar

Instructions

Cake

  1. Heat oven to temperature specified on cake mix. Lightly grease a 9 x 13-inch pan or Bundt pan.
  2. In a large bowl, combine cake mix, gelatin mix, oil, water, eggs, orange juice and sugar. Beat until well combined.
  3. Pour batter into pan.
  4. Bake as directed on cake mix box.

Glaze

  1. Combine orange juice and sugar in a small bowl.
  2. Poke holes in top of hot cake with a wooden pick.
  3. Pour glaze over cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
