Strawberry Poke Cake

Strawberry Poke Cake is so refreshing! I like to make it and store it covered in the refrigerator. It's delightful served ice cold!

Strawberry Poke Cake recipe

Yield: 12 servings

Ingredients

  • 1 (18.25 ounce)box white cake mix*
  • Water, oil and egg whites called for on cake mix box
  • 1 cup boiling water
  • 1 (4 serving size) box strawberry gelatin**
  • 1 (12 ounce) can fluffy white frosting
  • 12 fresh strawberries, cut in half (optional)

Instructions

  1. Heat oven to 350 degrees F. Spray bottom of 13 x 9-inch pan with cooking spray.
  2. In large bowl, beat cake mix, water, oil and egg whites with electric mixer on low speed for 30 seconds.
  3. Beat on medium speed for 2 minutes, scraping bowl occasionally. Pour into prepared pan.
  4. Bake for 28 to 32 minutes or until a wooden pick inserted in center comes out clean.
  5. Cool on cooling rack for 20 minutes.
  6. Meanwhile, in a medium bowl, pour boiling water on gelatin; stir until gelatin is dissolved.
  7. Poke cake every inch with handle of wooden spoon or tines of meat fork halfway into cake. Carefully pour strawberry gelatin evenly over top of cake. Refrigerate.
  8. Spread frosting over top of cake. Cut into 4 rows by 3 rows. Garnish each piece of cake with strawberries, if desired.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.

**This cake can be made with any flavor gelatin.
