Coconut Pound Cake

Ingredients

Cake

  • 1 cup (2 sticks) margarine
  • 1/2 cup shortening
  • 3 cups granulated sugar
  • 6 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 cup milk
  • 1 1/2 cups coconut

Glaze

  • 1 cup granulated sugar
  • 1/4 cup (1/2 stick) margarine
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 cup coconut

Instructions

  1. Cake: Cream margarine, shortening and sugar together.
  2. Add eggs, one at a time.
  3. Add vanilla extract.
  4. Add flour and milk alternately.
  5. Mix in coconut.
  6. Bake in a greased and floured tube pan for 1/2 hour at 275 degrees F.
  7. Glaze: Boil all ingredients except coconut for 2 minutes.
  8. Add coconut.
  9. Spread mixture over cake and let cool.
