Tennessee Pound Cake

Ingredients

Cake

  • 1 1/2 cups oil
  • 4 eggs
  • 2 cups granulated sugar
  • 1 cup chopped nuts
  • 2 1/2 cups self-rising flour
  • 1 (8.25 ounce) can crushed pineapple with juice
  • 3 teaspoons cinnamon

Glaze

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup cream

Instructions

Cake

  1. Heat oven to 325 degrees F. Grease and flour* a tube pan.
  2. Cream together oil, eggs and sugar.
  3. Add remaining cake ingredients. Blend well.
  4. Pour into pan and bake for 1 hour 20 minutes.
  5. Add glaze when cake is well cooled.

Glaze

  1. Mix and cook glaze ingredients over low heat until thick.
  2. Pour over cooled cake.
