Carrot Cake

Ingredients

Cake

  • 1 1/2 cups vegetable oil
  • 2 cups grated carrots
  • 4 egg yolks
  • 3 1/2 teaspoons hot water
  • 2 cups granulated sugar
  • 2 1/4 cups all-purpose flour
  • 2 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons nutmeg
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 egg whites, beaten until stiff
  • 1/2 cup nuts
  • 1/2 cup coconut

Frosting

  • 8 ounces cream cheese
  • 1/2 cup (1 stick) margarine
  • 1 teaspoon vanilla extract
  • Confectioners' sugar
  • 1 cup nuts

Instructions

  1. Cake: Mix together well all ingredients except egg whites, nuts and coconut.
  2. Fold in egg whites.
  3. Fold in nuts and coconut.
  4. Bake in 3 layers for 35 to 40 minutes at 325 degrees F.
  5. Frosting: Cream together the cream cheese, margarine and vanilla extract.
  6. Add confectioners' sugar until creamy.
  7. Add nuts.
  8. Frost the three layers.
