Cherry Cake
Ingredients
- 2 cups Northwest Cherries, pitted and halved
- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 eggs
- 4 tablespoons unsalted butter
- 3/4 cup milk
- 1 teaspoon vanilla or almond extract
- 1 teaspoon salt
- 1 teaspoon baking powder
- Powdered sugar
Instructions
- Heat oven to 350 degrees F.
- Cream together butter and sugar.
- Mix in eggs.
- Sift together flour, baking powder and salt. Add dry ingredients to wet.
- Stir in milk and vanilla extract.
- Butter a 9 inch square baking dish and line with pitted cherries. Pour batter over cherries and bake for 30 minutes, until cake tester comes out
clean.
- Dust with sifted powdered sugar while cake is cooling.
