Cherry Cake

Cherry Cake recipe

Ingredients

  • 2 cups Northwest Cherries, pitted and halved
  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 eggs
  • 4 tablespoons unsalted butter
  • 3/4 cup milk
  • 1 teaspoon vanilla or almond extract
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • Powdered sugar

Instructions

  1. Heat oven to 350 degrees F.
  2. Cream together butter and sugar.
  3. Mix in eggs.
  4. Sift together flour, baking powder and salt. Add dry ingredients to wet.
  5. Stir in milk and vanilla extract.
  6. Butter a 9 inch square baking dish and line with pitted cherries. Pour batter over cherries and bake for 30 minutes, until cake tester comes out clean.
  7. Dust with sifted powdered sugar while cake is cooling.
