Chocolate Oatmeal Cake
This cake doubles well. If you double, put it in a 9 x 13-inch pan.
Ingredients
Cake
- 1 cup quick oatmeal
- 1 stick (1/2 cup) butter
- 1 1/2 cups boiling water
- 2 eggs
- 1/2 cup cocoa
- 1 1/2 cups granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Chocolate Icing
- 1/2 cup cocoa
- 1/2 teaspoon salt
- 2 cups granulated sugar
- 1/2 cup milk
- 1/2 cup butter
Instructions
- Cake: Heat oven to 375 degrees F. Grease and flour a 9-inch square pan.
- Pour boiling water over the oatmeal and butter; let set for 20 minutes, stirring frequently.
- Add eggs to the oatmeal mixture, blending well.
- Sift together the dry ingredients, and add to the oatmeal and egg mixture. Stir well. Pour into prepared pan.
- Bake for about 25-30 minutes or until it tests done.
- Chocolate Icing: Combine all ingredients and boil together for 2 minutes.
Remove from heat and add 1 teaspoon vanilla extract. Cool until lukewarm.
- Beat until creamy enough to spread. If the frosting is too thin, add confectioners' sugar to make the right spreading consistency.
