Graham Cracker Cake



  • 1/2 cup butter or margarine
  • 1 cup granulated sugar
  • 3 eggs, separated
  • 1 (16 ounce) package Graham cracker crumbs
  • 1 1/2 cups milk
  • 3 teaspoons baking powder


  • 1/2 cup butter or margarine
  • 1 pound confectioners' sugar
  • 1 egg
  • Lemon juice, to taste


  1. Cake: Cream butter, sugar and egg yolks; add crumbs, milk and baking powder. Mix well.
  2. Fold in egg whites.
  3. Bake in two (8-inch) round pans at 325 degrees F to 350 degrees F for 30 minutes.
  4. Frosting: Beat confectioners' sugar and egg until smooth.
  5. Add lemon juice to taste; beat in butter until creamy smooth.
  6. Frost cool cake.
