Hummingbird Cake

Hummingbird Cake, a Southern favorite, features 3 layers of sweet, moist cake loaded with crushed pineapple and bananas, then topped with a luscious cream cheese frosting. It’s the perfect cake for spring, summer or any celebration!

Ingredients

Cake

  • 3 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups granulated sugar
  • 1 1/2 cups vegetable oil
  • 3 eggs
  • 1 (8 ounce) can crushed pineapple, undrained
  • 2 cups mashed bananas
  • 1 cup ground pecans
  • 1 1/2 teaspoons vanilla extract

Cream Cheese Icing

  • 8 ounces cream cheese
  • 1 cup (2 sticks) butter
  • 1 teaspoon vanilla extract
  • 1 box confectioners' sugar

Instructions

  1. Cake: DO NOT DRAIN PINEAPPLE.
  2. Mix flour, baking soda, salt, cinnamon and sugar.
  3. Add all other ingredients. Stir until mixed well.
  4. Divide into 3 greased and floured pans.
  5. Bake at 350 degrees F for 30 to 35 minutes.
  6. Cream Cheese Icing: Cream cheese and butter together.
  7. Add vanilla extract and sugar.
  8. Decorate with chopped pecans, if desired.
