Oatmeal Cake

Yield: one 13 x 9-inch cake

Ingredients

Cake

  • 1 1/4 cups boiling water
  • 1 cup raw oatmeal
  • 1/2 cup (1 stick) butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon

Frosting

  • 3/4 cup granulated sugar
  • 1/4 cup cream or milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup (1 stick) butter
  • 1 cup pecans, chopped
  • 1 cup coconut

Instructions

  1. Cake: Mix together water, oatmeal and butter in a bowl and let stand for 20 minutes.
  2. Add remaining ingredients and mix well.
  3. Bake at 350 degrees F for about 35 minutes in a 13 x 9-inch pan.
  4. Frosting: Mix ingredients together and bring to a boil. Spread over cake while still warm.
  5. Put under broiler for a few minutes.
