Oatmeal Cake
Yield: one 13 x 9-inch cake
Ingredients
Cake
- 1 1/4 cups boiling water
- 1 cup raw oatmeal
- 1/2 cup (1 stick) butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
Frosting
- 3/4 cup granulated sugar
- 1/4 cup cream or milk
- 1/2 teaspoon vanilla extract
- 1/2 cup (1 stick) butter
- 1 cup pecans, chopped
- 1 cup coconut
Instructions
- Cake: Mix together water, oatmeal and butter in a bowl and let stand for 20 minutes.
- Add remaining ingredients and mix well.
- Bake at 350 degrees F for about 35 minutes in a 13 x 9-inch pan.
- Frosting: Mix ingredients together and bring to a boil. Spread over cake
while still warm.
- Put under broiler for a few minutes.
