Picnic Caramel Cake

Ingredients

  • 1/2 cup shortening
  • 2 cups flour
  • 2 1/4 teaspoons baking powder
  • Pinch of salt
  • 1 cup plus 2 tablespoons granulated sugar
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • 2 eggs, unbeaten
  • 1/2 cup nuts

Instructions

  1. Heat oven to 350 degrees F. Lightly oil a 9-inch square baking pan.
  2. Soften shortening. Sift in dry ingredients.
  3. Add milk and mix until flour is dampened; beat 2 minutes.
  4. Add vanilla extract, eggs and nuts; beat 1 minute.
  5. Bake for 35 minutes in prepared pan.
