Pineapple Sheet Cake with Boiled Topping



  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 large can crushed pineapple (undrained)


  • 3/4 cup evaporated milk
  • 1 cup sugar
  • 1 stick butter
  • 1 cup chopped nuts (optional)
  • 1 cup coconut (optional


  1. Heat oven to 350 degrees F.
  2. Cake: Mix all dry ingredients in a bowl.
  3. Add oil, eggs, and pineapple and mix well.
  4. Bake for about 25 minutes in a 10 x 15-inch sheet pan.
  5. Topping: Combine evaporated milk, sugar and butter, and boil for 10 minutes, stirring constantly.
  6. Add nuts and coconut, if desired.
  7. Pour topping on cake while cake is still hot.
