Raspberry Cake
Ingredients
Cake
- 1/3 cup butter
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup milk
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- Pinch of salt
- Fresh or frozen raspberries, blueberries or blackberries*
Icing
- 1 1/2 cups powdered sugar
- 2 to 3 teaspoons milk
- 1 teaspoon vanilla extract
Instructions
- Cream butter and sugar, beat in egg and add vanilla extract.
- Add remaining ingredients except berries and mix well.
- Put into a greased and floured** 13 x 9 x 2 inch pan.
- Sprinkle berries on top.
- Bake at 350 degrees F for 30 to 40 minutes.
- Remove from oven and drizzle with icing while hot.
Notes
* I use about 2 cups of berries. It depends on your taste.
* For best results, use our Pan Release!
