Rhubarb Spice Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups finely chopped fresh rhubarb
  • 1 1/4 cups granulated sugar
  • 1 cup chopped nuts
  • 1/2 cup vegetable oil
  • 1/3 cup water
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 3 eggs

Instructions

  1. Heat oven to 350 degrees F. Grease and flour* a 13 x 9 x 2 inch pan.
  2. Beat all ingredients on low speed for 1 minute, scraping bowl constantly. Beat on medium speed for 2 minutes, scraping bowl occasionally. Pour into pan.
  3. Bake for 45 to 50 minutes or until wooden pick inserted in center comes out clean.
  4. Cool on wire rack.
  5. Serve with whipped cream if desired.
